Baked Rice With Fish

The kids are bored with porriadge. My princess has specially placed an order from the chef to cook rice for her, she said her friend’s eating rice and at Ku Poh’s house the 2 boys also eating rice. WH also not too keen on porriadge these days, so I’m trying to please their taste bud today.

Since JS specially requested rice. Here’s what I did for her.

1) Cooked white rice early in the morning and let it cool.

2) Prepared some fish slices, marinate with a little salt, pepper and italian mixed herbs for at least 20mins

3) Chopped some garlic and spring onion, diced onion & button mushrooms and prepared some frozen corn.

4) Heat oil and scrambled egg, set aside.

5) Melt butter in a saucepan, add garlic and fry till fragrant. Add onion, corn and mushrooms to fry well.

6) Add cooked rice, stir-fry briefly then pour in the scrambled egg, add some salt, pepper and italian mixed herbs.

7) Scoop the fried rice into an oven proofed dish, lay the marinated fish slices on top then scatter grated cheese.

8) Preheat oven at 180C for 10 minutes, send the sidh in to bake for 20 minutes or until chesse melts and turns golden brown.

The kids love it though WH took a little bit longer to finish. I didn’t cook somethings for myself and the maid. We had the same dish for our lunch. Simple and easy for the whole family to eat.
