Raisin Butter Cake

Another “I LOVE BUTTER CAKE” post. (The easiest to compose a post is to post lotsa recipes :P )

Ingredients

  • 200g butter
  • 150g caster sugar
  • 3 eggs
  • 1/4tsp vanilla essence
  • 150g raisins
  • 170g plain flour
  • 2Tbsp milk powder
  • 1/2tsp baking powder

Method

  1. Grease and line a loaf pan. Preheat oven to 175C
  2. Beat butter and sugar till light and fluffy
  3. Ad in eggs, one at a time, beating thoroughly after each addition
  4. Add in vanilla and raisins, fold in sifted flour,milk powder and baking powder. Mix until well blended. Spread into pan
  5. Bake in oven for 40 minutes
